The Best Banana Bread EVER

One of the best things you can do for living frugally is use up the food that you have that is going to go bad soon. In my case it’s always bananas. You can never get the correct amount of bananas. They are always eaten super fast or super slowly.

So one of the best ways to combat your bananas going bad is by making banana bread!

This recipe has been passed down from my dad to me and I’ve made a good amount of changes to it, but it’s fantastic! I make it at least 2-3 times a month and is a staple in my house!

I have a few tips and tricks that I will share with you. The first of these being my pans! I like to use three otis containers they are glass and make it easy to see the bread from the outside of the container while cooking.

Also, I put the containers on a cookie sheet that makes it super easy to put in and take out of the oven!

Other tips, use some type of surface to stick in the bread to check if it is done. For some, this is a spaghetti noodle but I like to use a knife.

The Recipe

Banana Bread

The best banana bread for those bananas that are about to go bad!

Ingredients
  

  • 4 Bananas
  • 1 Cup Granulated Sugar
  • 2 Cups Flour
  • 1 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 3/4 Cups Butter
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Powder (optional)

Instructions
 

  • Preheat oven to 350°F Lightly grease loaf pan or put liners in muffin pan.
  • In large bowl, add all bananas and sugar. Whip for a good 3 minutes until light & fluffy.
  • Add melted butter, eggs and vanilla; beat well scraping sides.
  • Add flour, baking soda, salt, and baking powder; mix until smooth
  • Bake for 1 hour if in loaf pan. Approx. 15-20 minute if large muffins. Check with
    toothpick.
  • Cool for 10 minutes then turn out loaf or pull muffins out of pan to cool completely.
